4oz ground almonds
2 oz dessicated coconut (this needs grinding in a liquidiser) or replace with more ground almonds
2 oz flour (I used granary but plain would be better)
Milk and water to make batter
Oil for frying.
Sweetener if liked
Beat the egg. Mix the dry ingredients, add the egg and milk. Dilute with water to form a thin batter. Use less liquid if you want the English version.
Heat a well oiled frying pan. Fry pancakes.
Please note:large pancakes break apart so make them silver dollar sized and not too thin. Make sure the bottom of the pancake is well cooked before turning it over.
I served mine with butter because I had no sugar free syrup. I reheated some this morning with butter and a tiny amount of lemon curd - nice!
The carbs are in the flour and milk. Lemon curd is, of course, full of them.
