1 beaten egg
6 oz (1 +1/2 cups) breadcrumbs (or substitute - see below)
1 small onion chopped
1/2 teaspoon sage
1 lb ground beef
1 beef bouillion cube crumbled and dissolved in hot water if liked. (I don't!)
Chilli sauce topping if liked.
I make breadcrumbs with either granary bread ( this has carbs!) or, if I have the time, slices of a madeira cake made without sugar or sweetener and using the following 'flour' recipe - 1/2 ground almonds eg. 4 oz, 1/4 coconut eg. 2 oz and 1/4 flour - plain or self raising. I add 2 teaspoons baking powder to make it rise. It does work and does not 'taste' the recipe and has far fewer carbs than ordinary bread.
Liquidise egg, onion, sage together. Mix with the breadcrumbs and ground beef - I use my Kenwood Chef. Line a loaf tin with a disposable liner and add meatloaf mixture. Bake for 1 +1/4 hour at 180 degrees centigrade. Test to see it is done.
This is a pretty foolproof recipe and is excellent hot or cold.
